International studies and epidemiological data have revealed a strong association between salmonellosis and chicken meat. This association provides serious challenges for food safety and international trade. Microbiological Risk Assessment is a food safety tool that is used to determine the incidence of food borne illnesses. The procedure identifies a microbiological hazard in the entire food continuum (from farm to fork), and estimates the adverse effects to human health, of ingesting the microbial hazard. ABSTRACT: The present study aimed to describe and characterize, for the first time, two outbreaks of salmonellosis caused by Salmonella Ndolo in foals and calves in Brazil and compare the isolated strains with S. Ndolo previously identified in asymptomatic reptiles. The affected calves and foals presented fever, lethargy, and profuse diarrhea. The clinical conditions of healthy calves infected with 10(9) CFU of Salmonella Typhimurium were evaluated and the viability of the experimental model in disease induction was verified. Twelve male Holstein calves, 10 to 15-days old, were examined. They were allocated into two groups, control and experimentally infected. Animals were submitted to clinical examination after inoculation and at every 24 hours, during six days after infection. Samples of rectal swabs were collected for Salmonella Typhimurium isolation. Salmonella enterica is frequently associated with outbreaks of human salmonellosis, and products of avian origin, such as eggs and chicken meat, are the main vehicles of its transmission. The present study describes the occurrence of different serovars of Salmonella enterica and phagotypes of S. enterica serovar Enteritidis in eggs destined for human consumption. Four thousand eggs obtained from commercial egg laying farms and one thousand discarded hatching eggs from broiler farms, which were acquired at farmers' markets and informal shops, were analyzed. ABSTRACT This study reports a co-infection of Escherichia coli and Salmonella in a free-living ruddy ground dove (Columbina talpacoti) received at the Laboratory of Ornithological Studies of the State University of Ceará, Brazil. The bird presented diarrhea, leg paralysis and anorexia, and died shortly after. ABSTRACT: The present study aimed to describe and characterize a nosocomial outbreak caused by a multidrug resistant Salmonella Typhimurium in hospitalized calves at a veterinary medical teaching hospital from Brazil. Sixty-three (96.9%) calves showed lethargy, hyperthermia and profuse diarrhea and despite treatment, 26 (41.2%) animals died. Five animals were necropsied and stool samples of six calves were collected. The isolated strains were subjected to antimicrobial susceptibility test by disc-difusion method and were fingerprinted by ERIC-PCR. Animal models other than the mouse have been employed for the study of nontyphoidal Salmonella infections because the murine model is not suitable for the study of Salmonella-induced diarrhea. The microbe has developed mechanisms to exploit the host cell machinery to its own purpose. An experiment with 630 one-day-old chicks experimentally inoculated with Salmonella Typhimurium was performed to evaluate the effects of an organic acid blend (benzoic, fumaric and 2-hydroxi-4-methylltio-butanoic - HMTBa) on intestinal health and performance. The experimental challenge with Salmonella Typhimurium occurred in two different routes of administration: via crop on the first day after hatching, and via feed, offered from seven to 14 days of age. Salmonella strains isolated from 1,138 samples representing 28,199 biological materials (stool, urine, blood and other fluids), collected between January 1985 and January 1999 at a reference University Hospital in Ribeirão Preto, São Paulo, Brazil, were studied. The most frequently detected serotypes were Salmonella enterica subspecies enterica serotype4,5,12:i:- (S. I 4,5,12:i:) (21.2%), S. agona (15.8%) and S. enteritidis (11.3%). ABSTRACT: A 10-day old foal presented with a history of acute recumbency and generalized weakness, that progressed to seizure episodes and death. Post mortem examination revealed necrotizing and purulent omphalophlebitis and fibrinopurulent meningoencephalomyelitis. Salmonella Typhimurium was isolated from the central nervous system and determined to be the cause of the meningoencephalomyelitis. Due to the lack of evidence of gastrointestinal disease, the umbilical cord was considered the most likely portal of entry of the bacteria. The isolated S. Salmonellosis, a common human intestinal disorder primarily caused by contaminated meats and poultry, attacks an estimated two million Americans annually. Using a cost of illness approach, the medical costs and productivity losses alone were estimated to cost around one billion dollars in 1987. If pain and suffering, lost leisure time, and chronic disease costs could be quantified, the estimate would increase significantly. Other procedures for calculating the value of life could either raise or lower the estimated economic benefits of reducing human salmonellosis. Salmonella spp. was the major cause of reported foodborne diseases in the last years in the State of Rio Grande do Sul, South of Brazil. Epidemiological data on salmonellosis, occurred in the period of 1997 to 1999 and supplied by the Division of Sanitary Surveillance (DVS/RS), were analysed according to the following factors: total number of confirmed outbreaks, number of people involved, outbreaks incidence according to the period of the year, age and sex of involved people, food vehicle, food storage conditions, local where the disease occurred, and possible causes of the outbreaks.
